Pasture to Plate’s Ribeye Steak in Bone Marrow Sauce
(Makes 2 servings)

2  pieces of bone marrow
2 thick cut ribeye steaks
2 tablespoons flour
2/3 cups dry red wine

METHOD

  1. Remove the marrow from the bone and cut into little pieces, melt it in a well-seasoned cast iron pan.
  2. Pat the steaks dry and sear in the melted bone marrow, once seared, remove from pan and dust lightly with flour.
  3. Return the steaks to the pan and add the red wine, simmer for 2–3 minutes on one side and flip, the sauce will thicken a bit, add a sprinkle of good salt and freshly ground black pepper.
  4. Remove steaks from pan and serve with the red-wine marrow sauce drizzled over top.
